OKINAWAN PURPLE SWEET POTATO WAFFLES
- ½ cup rolled oats
- 2 organic & pasture-raised eggs
- 2 tbsp Okinawan Purple Sweet Potato
- ½ tsp baking powder
- Cinnamon to taste
- Light drizzle milk of choice
InstructionsStep 1: Add all ingredients into a high-powered blender and blend until all ingredients are at the desired consistency.
Step 2: Take a nonstick cooking spray and apply to waffle maker.
Step 3: Add ingredient mixture to waffle maker and close.
Step 4: Let mixture cook in waffle maker for 4-6 minutes or as instructed on the machine.
Step 5: Remove waffle and plate, topping with honey or maple syrup and blueberries.
